This refreshing recipe is easy to make and even easier to drink.



1 Persian cucumber

Fresh ginger root

2 quarts of filtered water

Ice (optional)



Peel and slice cucumber crosswise.

Slice ginger root into 6-8 thin, lengthwise pieces.

Place cucumber and ginger in a 2-quart glass pitcher.  Fill with filtered water.

Cover pitcher with plastic wrap and place in the refrigerator for several hours or over night.

Stir before serving.  Serve over ice, if desired.
